To preserve it for longer time. Actually baking power is a base. When the milkman adds it to the milk then the substance slows down the action of bacteria present in the milk. The bacteria as usually produces acid but this acid now has to first neutralises the base added and then set to sour the milk. It takes time and hence the milk is preserved for some more time from souring….
