Nitrogen gas prevent food from Rancidity
If it not flushed then it get rancid and give bad smell and tasteSo it should flushed with nitrogen ??
To prevent the food items from rancidity and nitrogen is only the gas which is not reactive with food items. ?
Because if they do not flushed they get oxidised and become rancid and give bad smell and taste
    To prevent them from rancidity.

To prevent the food from rancidity. And the nitrogen is a non reactive gas which does not.. react with oxygen
to prevent them from becoming rancid , when oil and fat containing food items comes in contact with moist air they become rancid which leads to bad taste, change in colour of food items.
bcoz nitrogen does not react easily with oxygen and prevents rancidity

Because nitrogen does not react with oxygen
    Due to prevent oxidation .
Because nitrogen is non reactive element, thus it protects food items to react with oxygen and get spoil.
Oil and fat containing food items flushed with nitrogen because nitrogen act as antioxidant and it prevent them from being oxidised.
