Because the earthen pot has very large number of small pores on his surface and when we kept the water in the earthen pot the water fill the small pores of earthen pot, by the process of sipping and then the present of water in small pores are continuously evaporate and take the latent heat of vaporisation from earthen pot. In this way the water losses heat and gets cooled.
because pot have tiny pours in it which has water stored evaporate slowly and causes cooling that\’s why water cool during summer
Because the water evaporates from the outer surface then the water is cool during the summer season cool better on a hot dry day
