Excess salt inhibits growth in pickles by exosmosis. Salt kills and inhibits the growth of microorganisms by drawing water out of the cells of both the microbe and the food through osmosis (or more specifically exosmosis). Due to hypertonic solution outside the bacterial cell, bacteria will die by plasmolysis.
